Ken McNulty at the Wisconsin Cheese Mart said other super-aged cheddars, cheeses aged more than 20 years, will be available for purchase at $60 per pound. Advertisement McNulty said the super-aged cheddars are in excellent shape and feature substantial crystallization on the outside of the blocks. He said the cheeses come with a letter of verification from cheesemaker Ed Zahn, with the exact date of production included. "We are extremely lucky to have found these blocks of Wisconsin Cheddar and look forward to sharing them with the public for the first time on October 6th," McNulty said.
