LA eatery dedicated entirely to mac 'n' cheese

Kelly Chapman's mac-O-licious started life as a macaroni and cheese food truck and has now opened its doors as a full-fledged restaurant.

LOS ANGELES, Oct. 15 (UPI) -- A Los Angeles restaurant is taking aim at the comfort food crowd with a menu composed entirely of dishes derived from macaroni and cheese.

Kelly Chapman began mac-O-licious as a food truck earlier this year and the success of her pasta creations led her to open a restaurant bearing the same name -- and an expanded menu -- in the Valley Village neighborhood.

"I told myself if I ever left corporate America, I would focus my attention on macaroni and cheese," Chapman, a former Microsoft employee, told Los Angeles Magazine.

The mac-O-licious menu, headlined by "Kelly Chapman's Original Southern Mac," includes mac and cheese creations with added ingredients including bacon, Maine lobster, crab meat, and vegetables.

The restaurant also serves an item dubbed "box mac," which the menu states was included "in honor of the recession."

Gluten-free options are also available.

Chapman was featured on CNBC's Restaurant Startup prior to mac-O-licious opening its doors, but her eatery was not selected to receive funding.
