Rachael McQuade and her husband were stuck in traffic on I-5 in Seattle when they spotted a bright green truck and a woman walking through the traffic with a to-go box. "What do you do in a time like that? You got to make the best of it, right?" McQuade told the Seattle Times. The truck's owner Thomas Lopez, 41, said they were on their way to serve lunch when a tanker overturned on the highway Monday morning, leaving the roads closed until 2:30 p.m. Lopez said the traffic was not enough to keep them from meeting the lunch rush as they decided to open up shop and make the best of the situation. "We are ready to serve food, everywhere," he said.
