'300 Sandwiches' woman engaged after only 257

Reporter Stephanie Smith's boyfriend proposed to her after 257, though she promised to make him 300.

NEW YORK, May 20 (UPI) --New York Post reporter Stephanie Smith has run her 300 Sandwiches blog since 2012, when her boyfriend was so impressed by one of her homemade sandwiches that he declared, "Honey, you're three hundred sandwiches away from an engagement ring."

Smith went on to blog about hundreds of sandwiches she created for her boyfriend, Eric Schulte, who couldn't wait to pop the question. He recently proposed in Barbados -- 43 sandwiches short.

"Words cannot express how extraordinarily happy I am," she wrote in a blog post announcing the news. "Not because I have a engagement ring, but because I'm going to spend the rest of my life having ridiculously amazing adventures with my soul mate."

In a story about the engagement for the Post, Smith said that she planned to continue to make sandwiches for her fiancé.

"He deserves those 43 sandwiches. Not just because he proposed, but because while I'm making them, he shows me how to really enjoy life," she said.

Smith's culinary quest was often targeted by critics who wondered about her blog's anti-feminist implications.

But Smith said it was all in good fun.

"The blog started as a lighthearted joke between boyfriend and girlfriend. I presented it to the world because I thought at least one person would find the humor in the idea of sandwiches for an engagement ring," she wrote in 2013.
