Fancy soup kitchen serves bison in wine

NEW YORK, Dec. 20 (UPI) -- A New York City soup kitchen may be the fanciest in the country, serving dishes such as soup of savoy and bison in wine and stock thickened with olive oil roux.

Chef Michael Ennes of Broadway Community Inc. cooks about 500 elegant meals a week for homeless people at a Harlem Presbyterian church.

"He's good, but sometimes I think the experimentation gets in the way of good taste," customer Jose Terrero, 54, tells The New York Times.

Ennes, a former restaurateur whose fortunes changed after the Sept. 11 terrorist attacks, says he does not mind criticism.

"They're still customers, whether they're paying $100 a plate or nothing," he says.

Ennes insists on oils without trans fats and local produce when he can get it. When he runs out of wine, he sometimes borrows communion wine from the church's pastor, making sure all the alcohol is cooked off since many customers are recovering from alcoholism.

Ennes also teaches cooking to homeless people, who in turn help prepare meals.

"I could have spent my life pampering the rich, which is a fine art," he says. "But I think I've found where I belong."
