Wisconsin company home of Sauerkraut

BEAR CREEK, Wis., May 27 (UPI) -- A Wisconsin company will produce more Sauerkraut than Germany for the second year, retaining the title as the world's largest maker of fermented cabbage.

The Great Lakes Kraut Co. says it is adding 25 new 900-ton stainless steel curing vats to increase production. The 32,000-square-foot expansion at its Bear Creek, Wis. facility will allow the plant to process 66,000 tons of cabbage grown on 2,200 acres of Wisconsin farmland.

"These vats are innovative for Sauerkraut. They are more hygienic and produce a finer quality kraut than the common cement and wooden vats," said co-owner Ryan Downs.

Wisconsin is proud of its German heritage and is internationally known for beer, bratwurst and cheese.

"Germany may have a rich tradition with Sauerkraut but we are proud to say that our beautiful state of Wisconsin is now and will continue to be the true home of SauerKraut," said Downs.

The 104-year-old company has manufacturing facilities in Bear Creek and Shortsville, N.Y. It offers recipes on its Web site, greatlakeskraut.co.
