Chipotle to test tofu in Chicago

CHICAGO, Oct. 12 (UPI) -- Chipotle restaurants in the Chicago area will soon to test a new option for vegetarians, the company said.

The Chicago Tribune reported Saturday the 83 Chipotle restaurants in and around Chicago will add shredded tofu to their menus.

The tofu will be served as "Sofritas," flavored with chiles and spices, the newspaper said.

Chipotle has already tested "Sofitas" on the West Coast. But the company is not ready to go national with the offering or declare it a permanent part of the menu.

Currently, vegetarians have limited options at Chipotle. The company, however, said it would change its pinto bean recipe to remove the pork, which would open that option up to vegetarians as well.
